You should be able to use for instance Property Calculator for this. Below is a sample rule that worked in a quick test. 

Test extensively to make sure this works under all conditions, for instance if M-Files is running any code or script as part of the state transition the current user may get value "M-Files Server" instead of the actual user who initiated the transition.
