Is it possible for the administrator to distribute to users which columns should be visible by default in workspaces? As we can do on views in the classic client

This is not yet possible in the new clients where Workspaces are configured otherwise. We are exploring adding that option later, but don't yet have confirmed plans or timelines.
That said, you may be able to achieve this via the classic M-Files Desktop. The process is not very straightforward or intuitive, but it can be used as a workaround if you need to distribute column settings urgently.

Workspaces use the Built-In view hierarchy behind the scenes, which enables this workaround via the classic client.
