If you never want to receive email notifications about assignments, you should be able to disable the built-in Assigned To notification rule under Advanced Vault Settings > Notifications > Built-In Rules. This would apply to all workflows and all assignments in the vault, it's not currently possible to configure this per workflow, for instance.
Another option would be to create rules in your email client that simply move assignment notifications to trash. This approach might give you more granular control over which notification emails you want to see and which you don't.
