I would like to know if there is a possibility to block access to user on the history of a document ?

Object permissions are version-specific, so if a user doesn't have access to a specific version of a document, they cannot see that version in the history. That way the version history always shows only what each user is supposed to see. To put differently, there isn't any "master switch" to block access to the document history completely but instead you should make sure each document version has the correct permissions e.g. as the doc moves through a workflow.

In our situation we have SOP which are showing for all the users and we make revisions of the document. So we would like that the users can see only the latest revision and no access to the earlier.
Do you have some ideas?

One great option for such cases is to use the Version Control Lite add-on module to control the publishing of the SOP. You would have a working copy with access limited to the editors and a separate published version available for a larger audience. The module configuration allows you do decide whether you want to have all the published versions available or only the latest revision (like in your case). This publishing model also enables you to start making modifications to the working copy and prepare the next revision without it affecting the SOP currently in effect.
Version Control Lite is separately licensed so please check if your current subscription allows you to use it.
